Preparation Instructions: Chop watermelon, strawberries, kiwi fruit, and peaches. Combine in a bowl with lime juice, honey, and mint. Set aside. Slice cucumber, chop tomatoes into large chunks. Rip lettuce. Toss in a large bowl. Set aside. Heat the preserves for 30 seconds. Grill pork, covered, over medium heat for 5 minutes. Turn and brush some of the preserves on the pork. Grill 8-9 minutes longer or until juices run clear and a the temperature is at least 160 F, basting occasionally with preserves.Serve pork with salsa and salad and dressing. |
